The Best Lasagna Casserole Freezer Meal

On our busiest weeks freezer meals are such a lifesaver. I feel like they are so amazing that I should do an entire blog series on the topic! We’ve just been so busy this week! Between sickness and babies and after school activities, I don’t feel like I’ve had a moment to breathe. This Lasagna Casserole freezer meal really makes me look like the best cook with minimal effort. Add a side salad if you really want to look like you tried hard! It’s a win with my husband and my picky eaters. It’s so delicious at my suddenly slow eater gobbles this stuff up and is asking for seconds!

What is a Freezer Meal?

A freezer meal is a meal you have prepped ahead of time and put in the freezer. Once ready to eat, you take it out and put it in the oven. Easy peasy lemon squeezy.

The Best Lasagna Casserole Freezer Meal

What’s in it?

  • 1 POUND Ground Beef
  • 1/4 CUP Chopped Onion
  • 1 TBS Minced Garlic
  • 1/2 TSP Pepper (divided)
  • 1/2 TSP Salt
  • 1 POUND Medium Pasta Shells (cooked and drained)
  • 4 CUPS (16 ounces) Shredded Part-Skim Mozzarella Cheese (divided)
  • 3 CUPS (24 ounces) 4% cottage cheese
  • 2 Eggs (lightly beaten)
  • 1/3 CUP Grated Parmesan Cheese
  • 2 TBSP Dried Parsley Flakes
  • 1 Jar (24 ounces) Meatless Pasta Sauce (I use Tomato Basil)

Prep: 20 minutes | Bake: 1 hour + Standing time | Makes: 6-8 Servings

1. Gather your ingredients.

2. In a large skillet, cook the beef, onion, and minced garlic over medium heat until the meat is brown and no longer pink. Drain. Sprinkle with sat and half of the pepper (1/4 tsp.). Set aside. (While cooking my beef, I also set my noodles on a burner and let them cook. They took a few minutes longer than the beef to cook.) 

 3. In a large mixing bowl, combine the pasta, 3 cups mozzarella cheese, cottage cheese, eggs, parmesan cheese, parsley, and remaining pepper.


4. Transfer the mixture to a shallow greased 3-qt. baking dish. Top with beef mixture and spaghetti sauce. Sprinkle with remaining mozzarella cheese. Be careful! The dish will be full!

5. Cover the casserole with tin foil.


Cover with tin foil. On the tin foil write the following instructions. This will save you from having to look up the recipe later. I like to cover the casserole and writing with another layer of tin foil to make sure everything stays tight. Okay, here are the instructions:

  1. Thaw in fridge over night.
  2. Remove from fridge 30 minutes before baking.
  3. Pre-Heat 350 degrees.
  4. Bakes 45 minutes Covered.
  5. Bake 15 minutes Uncovered. (Until 165 degrees inside).
  6. Let stand 10 minutes.
  7. LASAGNA CASSEROLE (and date).


Bake at 350 degrees for 45 minutes. Bake uncovered for 15 minutes longer. Let it stand for 10 minutes before serving. Make sure the temperature reads 165 degrees before serving!

    I really need to start making freezer meals! At least once a week something comes up and I either don’t feel like cooking or don’t have the time to. This would be much better than making everyone fend for themselves or sending my husband for take out!

    I am always looking for freezer meals, it makes my meal prep so much easier, I bet I can make individual ones to pop in. This is awesome.

    This recipe looks delicious! I’m a big fan of “freezer meals”, and I generally try to make two batches of whatever casserole I make for dinner on the weekend. One for dinner that night, and one for the freezer. Makes dinner on hectic mid week nights so simple!

    This looks amazing! I love lasagna but I usually don’t have time to make them. This is a perfect solution! I never thought about freezer meals!
